  1. In a soup pot add the olive oil and on a medium heat saute the poblano and onion for 5 minutes, add the chuck and break apart with a wooden spoon and saute until the pink dissapears, around 5 minutes. DRAIN the grease and put the mixture back into the pan. Add 1/2 of the seasoning and stir for 2 minutes, add the vinegar,garlic and worcestershire and stir another 2 minutes. Add the remaining seasoning , stir then addd water and turn up heat and bring to a boil. reduce heat to low and simmer unti liquid is absorbed. Add the tomato sauce and simmer for another 20 minutes or until there is very little moisture. Now make yourself some dogs and put some mustard on the dog and smother it with the chili.
