Ingredients:

Directions:

  1. Wash and dice the red potatoes. I usually use two red potatoes and when diced it serves about 4 people.
  2. On stovetop, heat Extra virgin olive oil.
  3. Add diced red potatoes, a dollop of butter or margarine, salt, pepper, thyme and season salt (to your taste I like my food really seasoned).
  4. Add 1/4 cup of water and cover on medium heat to steam the potatoes, stirring occasionally.
  5. Heat another pan and add ground sausage, chop up the sausage as it cooks.
  6. In a bowl, beat eggs and add a little milk.
  7. In an additional pan scramble the eggs.
  8. All three pans should be done-potatoes, sausage, and eggs.
  9. Combine onto a tortilla and top with cheese.
  10. Enjoy!
