Ingredients:

  • 3 1/2 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp lemon juice
  • 3/4 cup shortening
  • 1 1/2 cups sugar
  • 3 eggs
  • 3/4 cup milk
  • 1/2 cup chopped walnuts (optional)

Directions:

  1. Preheat oven to 350.
  2. Sift together dry ingredients.
  3. Mash bananas, add lemon juice and mix.
  4. Cream shortening and sugar in largest bowl; add eggs and beat until light and fluffy.
  5. Add dry ingredients alternately with milk; Beat after each addition.
  6. Fold in bananas and nuts.
  7. Pour batter into two greased loaf pans.
  8. Bake 1 hour or until toothpick inserted in center comes out clean.
