Bea's Garlic Potatoes

Ingredients:

  • 2 garlic cloves
  • 1/2 tsp savory
  • 1 tbsp olive oil
  • 1 1/2 lbs red fingerling potatoes , sliced in half lengthwise

Directions:

  1. Preheat oven to 475 degrees.
  2. Finely chop garlic, and sprinkle with salt. Mash into a paste with back of spoon.
  3. Place in bowl with thyme, savory and oil.
  4. Toss potatoes with garlic mixture.
  5. Place on foil lined baking sheet and bake until browned, about 20 to 25 minutes.
