Ingredients:

  1. Rinse and sort beans then soak in a covered pot of water overnight. In the morning, rinse beans again and put in crock pot with enough water to cover. Cook for about 6 hours on high, or til soft, adding water as needed. When beans are done, heat olive oil in skillet and saute onions til soft, add diced smoked sausage (I used the skinless version) and cook til brown, about 5 minutes. Add garlic and Braggs Liquid Aminos and cook additional 5 minutes. (You won't need salt if you use the liquid aminos and they add lots of good minerals that we don't usually get in our diets.) Stir smoked sausage mixture into the beans and let the flavors marry for about 15 minutes if you like. Serve with hot wheat buns or cornbread.
  2. *Note: I eyeballed these measurements, so adjust to your taste. I just used beans I had on hand and used minced organic garlic in a jar.
  3. Also, I added 2 -3 tablespoons of Bragg's organic sprinkles, (it was not in the database on this website so I couldn't include it in ingredients) a mixture of 24 herbs and spices that you can buy in a bottle at any health food or larger grocery store. The liquid aminos and sprinkles are great if you are watching your sodium intake! Enjoy!
