Ingredients:

  • 1/2 cup water
  • 1 (1/4 oz) packet dry yeast
  • 1 1/2 cups milk
  • 1/4 cup shortening
  • 2 tsp salt
  • 2 eggs
  • 3 3/4 cups flour

Directions:

  1. Dissolve 1 tsp sugar in warm water in large bowl.
  2. Sprinkle in yeast. Let stand 10 minutes, then stir well.
  3. Combine milk, 1/4 cup sugar, shortening and salt in saucepan.
  4. Heat until lukewarm and shortening is melted. Stir well.
  5. Add to yeast mixture.
  6. Add 2 3/4 cups flour and beat vigorously with wooden spoon or electric mixer until smooth.
  7. Gradually stir in remaining 1 cup flour.
  8. Batter will be soft.
  9. Cover with tea towel.
  10. Let rise in warm place until doubled about 1 hour.
  11. Stir down dough and let stand 10 minutes.
  12. Fill greased muffin cups 1/2 full.
  13. Let rise until doubled 45 minutes.
  14. Bake at 375°F for 20-25 minutes or until golden.
  15. Turn out of pans immediately.
  16. Serve warm and cool.
