Banana Tea Bread

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup shortening
  • 2/3 cup sugar

Directions:

  1. Sift together flour, baking powder, soda and salt.
  2. Beat shortening until creamy.
  3. Add sugar gradually and continue beating until light and fluffy.
  4. Add eggs and beat well.
  5. Add flour mixture alternately with bananas, a small amount at a time, beating after each addition until smooth.
  6. Turn into a well-greased bread pan (8 1/2x4 1/2x3 inches).
  7. Bake at 300 degrees, about 1 hour 10 minutes, or until bread is done.
  8. Note: Use fully ripe bananas, yellow peel flecked with brown.
