Ingredients:

  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/8 tsp cayenne pepper , to taste (optional)
  • 1 1/4 cups mashed bananas
  • 1 large egg
  • 2 tbsp milk

Directions:

  1. Set oven to 375 degrees.
  2. Spray a baking sheet with cooking spray.
  3. In a bowl whisk together cornmeal, flour with baking powder, salt, cinnamon and cayenne pepper (if using).
  4. In another bowl mix together banana with egg and milk.
  5. Add the cornmeal mixture to the banana mixture and stir until just combined.
  6. Heat a small amount of oil in a skillet over medium-high heat.
  7. Drop about 2 tablespoons batter into the skillet; cook until golden brown (about 1 minute on each side, do not overcook in the skillet just until lightly browned).
  8. Using a spatula transfer to baking sheet.
  9. Continue with remaining batter (adjust heat to avoid burning the fritters).
  10. Bake until puffed and firm to the touch (about 8-10 minutes).
