Banana Caramel Pecan Crepes

Ingredients:

Directions:

  1. Mix together all ingredients for the crepes.
  2. Heat a small skillet over med high heat and spray with non-stick cooking spray.
  3. Pour 1/4 cup of batter in skillet and swirl around to coat the bottom of the pan.
  4. When the crepes begin to pull away from the side of the pan flip crepe and cook for about 30 seconds.
  5. Remove from pan and set aside.
  6. Melt butter in a large nonstick skillet over medium-high heat.
  7. Add pecans; saute 1 minute.
  8. Add bananas; saute 2 minutes.
  9. Drizzle with 1/3 cup syrup; cook 1 minute.
  10. Remove from heat.
  11. Spoon about 1/3 cup banana mixture into the center of each crepe.
  12. Fold sides and ends over.
  13. Place on a serving platter, seam sides down; drizzle with remaining syrup.
