Directions:

  1. Beat eggs and sugar until smooth. Add banana's, oil and vanilla.
  2. Let stand 5 mins.
  3. Combine dry ingredients and add to egg mixture. Mix until just blended. Spoon into lined muffin cups.
  4. Bake at 350F 20-25mins.
