  1. Pastry:
  2. Combine flour, butter and sugar and pinch of salt and mix till it resembles breadcrumbs. Add the egg yolk and 1 t cold water, mix till the dough comes together. Flatten dough into a disc, cover with plastic wrap and chill for no more than 1 hour.
  3. Roll out the pastry on floured surface to about 1/8 thick. Line an 8 tart tin or pie pan with pastry. Prick bottom with a fork and chill for 20 minutes.
  4. Fill shell with dried beans,rice or pie wgts and bake at 350 degrees for 20 min or till light golden color. Remove wgts, brush the inside of pastry with a little egg white and bake for an additional 2 minutes. Remove from oven and cool slightly.
  5. To make filling and assemble tart:
  6. Spread jam over the top of slightly cool shell.
  7. With an electric mixer cream together butter and sugar. Gradually add the 3 beaten eggs and egg yolk. Fold in ground almonds and lemon zest by hand. Carefully spoon mixture over the jam and level the top of tart. Bake at 350 for 30 to 35 minutes, then sprinkle with sliced almonds and continue to bake for another 5 minutes or until almonds brown slightly.
  8. Place tart on wire rack and let cool to room temp., then dust with powdered sugar and serve with custard or whipped cream if desired.
