Baked Parmesan Mashed Potatoes

Ingredients:

Directions:

  1. Preheat oven to 400°F.
  2. Coat the bottom of a 9X13 inch baking dish with 1tbsp butter.
  3. Cook the potatoes for about 15 minutes in a large pot of boiling, salted water until they are very tender.
  4. Drain the potatoes and return to the pot.
  5. Mash well.
  6. Mix in the milk and melted butter.
  7. Mix in the mozzarella and 3/4 cup of the parmesan.
  8. Season to taste with salt and pepper.
  9. Mix together the bread crumbs and remaining parmesan.
  10. Transfer the potatoes to the baking dish and top with the bread crumb mixture.
  11. Bake, uncovered, until topping is golden brown - about 20 minutes.
