  1. Pare and dice one eggplant.
  2. Boil in salt water until soft. Drain.
  3. Stir in cracker crumbs, eggs, and milk
  4. Put in greased dish.
  5. Cover with cracker crumbs and small bits of smart balance.
  6. Bake slowly 30 to 45 minutes, 350-400 degrees.
