Bailey's Chocolate Mousse (Perfect for St. Patrick's Day)

Ingredients:

  • 1 (1/4 oz) envelope unflavored gelatin
  • 1 tsp vanilla
  • 3/4 cup milk
  • 3/4 cup bailey's irish cream
  • 2 cups frozen whipped topping (thawed)

Directions:

  1. Pour milk into a medium saucepan.
  2. Sprinkle gelatin over the milk and let it sit about 1 minute.
  3. Turn on low heat and stir until completely dissolved. About 5 minutes.
  4. Add chocolate chips and continue stirring until melted.
  5. Stir in vanilla.
  6. Remove from heat.
  7. Let sit about 5 minutes, stirring occasionally.
  8. Add Bailey's.
  9. Let cool until peaks form when mixture is dropped from a spoon.
  10. Fold in whipped topping.
  11. Turn into prepared crust or serving bowls.
  12. Chill at least 4 hours. I know it's hard to wait, but it's worth it!
  13. Garnish with fruit or additional whipped topping. Enjoy!
