Avocado Salad With Red Onion

Ingredients:

  • 4 lemons , zest from all and 8tbsp of juice
  • salt and pepper to taste
  • 1 large red onion ,cut crosswise into ver thin slices(should be about 1 and 1/2 cups)
  • 1/3cup choped cilantro

Directions:

  1. To make dressing:
  2. Combine lemon juice,lemon zest and extra virgin olive oil in a bowl;season with salt and pepper and toss half of it with red onions. On four plates,lay out a bed of avocado slices and season with salt and pepper. Top avocados with red onions.
  3. Drizzle the remaining dressing evenly over the salads and sprinkle cilantro on top.
