Ingredients:

Directions:

  1. Cool sweet potatoes in an ice bath.
  2. Having cooked bacon in medium skillet, remove and set aside. Add sweet potatoes and caramelize on each side. Remove from heat.
  3. Add red onion, mustard, salt and pepper and toss.
  4. Chop bacon to 1/4 inch strips and mix into hash.
  5. Fold in parsley, pecans and avocado.
  6. Season to taste.
  7. Serve warm to room temperature.
