Ingredients:

Directions:

  1. Preheat oven to 325°F.
  2. CRUST: Mix crumbs, 1/2 cup pecans, 3 tbls sugar, 1/2 tsp cinnamon & butter.
  3. Press onto bottom of a 9 inch springform pan.
  4. Bake 325 F for 10 minutes.
  5. FILLING: Beat cream cheese, 1/2 cup sugar & vanilla with electric mixer on medium speed until well blended.
  6. Add eggs, one at a time, mixing on low speed after each addition, just until blended.
  7. Pour over crust.
  8. TOPPING: Mix 1/3 cup sugar & 1/2 tsp cinnamon; toss with apples.
  9. Spoon apple mixture over cream cheese layer.
  10. Sprinkle with 1/4 cup pecans.
  11. BAKE 325 for 1 hour & 10 min to 1 hour & 15 min or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake. Cool before removing rim of pan.
  12. Refrigerate 4 hours or overnight.
