Ingredients:

  • 1/2 cup butter
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1/3 cup milk
  • 1 1/2 cups blueberries
  • 1 tbsp flour
  • 1 tbsp sugar
  • 1/2 tsp cinnamon

Directions:

  1. Preheat oven to 350*.
  2. Grease and flour a 9” pan.
  3. In medium bowl, cream butter with 1/2 Cup sugar, add salt, vanilla, egg yolks and beat till fluffy.
  4. In small bowl, combine 1 1/2 Cups flour with baking powder; add to creamy mixture alternately with milk mixing to form a smooth batter. Set aside.
  5. In medium bowl gently mix berries with 1Tbsp flour, fold into batter and set aside.
  6. Beat egg whites to soft peaks and gently fold into batter. Pour in prepared pan. Mix remaining sugar, cinnamon and nutmeg; sprinkle over batter.
  7. Bake 45-50 minutes until cake is done. Serve warm with a scoop of ice cream.
