Ingredients:

Directions:

  1. Wash asparagus and snap off dry ends.
  2. Place asparagus in frying pan and saute in salted water until just tender. Reserve cooking liquid and set asparagus aside in covered serving dish to keep warm.
  3. In same frying pan, saute garlic in oil until tender but not brown.
  4. Add 1/3 C liquid from cooked asparagus, well-beaten egg and lemon juice. Mix well.
  5. Cook over low heat until thickened, stirring constantly. Add pepper and salt if needed and, if wanted, a pinch of oregano.
  6. Pour over hot asparagus and serve.
