Art And Soul Of Baking Pumpkin Walnut Bread

Ingredients:

  • 2 cups flour
  • 3/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp cloves
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 2 large eggs
  • 1/3 cup water
  • 1 1/2 cups sugar
  • 1/2 cup neutral oil like canola
  • 1 cup chopped toasted walmuts

Directions:

  1. In one bowl whisk dry ingrdients except sugar.
  2. In another mix egg and water
  3. Add sugar and blend well.
  4. Mix together pumpkin, oil, vanilla and oil
  5. Add pumpkin mixture to dry mixture and blend well.
  6. Stir in nuts.
  7. Bake in a oiled 9 x 5 inch loaf pan in a 350F oven 60 to 65 minutes or tested done.
  8. Turn out to rack to col completely
  9. Store room temp up to 2 days or in refrigerator up to 4 days
  10. Cut with serated knife
