Ingredients:

Directions:

  1. Soak the dried apricots in warm water for 15 minutes, then drain and pat dry.
  2. Cut in small pieces.
  3. Beat or whisk the butter, sugar and eggs together.
  4. Sift the flour and the baking powder together.
  5. Add the flour,the cream and the apricot pieces to the butter mixture.
  6. Stir till everything is well incorporated.
  7. Bake in an oiled waffle iron according to manufacturer's directions.
  8. Serve warm!
