  1. Apricot, Spinach and Bacon Salad (2 of 2)Ingredients (continued)1 teaspoon House of Tsang® Ginger Flavored Soy Sauce
  2. 1 teaspoon grated peeled gingerroot
  3. 4 cups fresh spinach
  4. 1 cup Hormel® Real Crumbled Bacon
  5. Directions1.In large bowl, combine beans, apricots, bell pepper, onions, cilantro and garlic; mix well.
  6. 2.In jar with tight-fitting lid, combine apricot nectar, oil, vinegar, soy sauce and gingerroot; cover. Shake well.
  7. 3.Pour over bean mixture; toss to coat. Cover; refrigerate 2 to 24 hours.
  8. 4.Toss bean mixture with spinach and bacon to serve.
