Ingredients:

Directions:

  1. Beat eggs, jam and vanilla essense together with a wooden spoon.
  2. Blend in margarine and dried apricots.
  3. Sift flours together into apricot mixture.
  4. Beat until well combined.
  5. Finally, add flaked almonds.
  6. Place spoonsfuls of mixture onto lightly greased baking trays.
  7. Bake in moderate oven (180c) for 12 to 15 minutes.
  8. Cool slightly on tray, then transfer to wire rack to cool completely.
  9. Store in an airtight container.
