Applesauce Bread

Ingredients:

  • 2 large eggs
  • 2/3 cup brown sugar firmly packed
  • 1/3 cup cooking oil
  • 1 cup applesauce
  • 1-1/2 cups all purpose flour sifted
  • 1 tsp salt
  • 1/2 tsp ground nutmeg
  • 1-1/2 cups rolled oats
  • 3/4 cup prunes diced

Directions:

  1. Preheat oven to 350 then lightly grease a loaf pan and set aside.
  2. Beat together the eggs, brown sugar and cooking oil in a mixing bowl.
  3. Stir in applesauce and blend again.
  4. Sift in flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  5. Add rolled oats, prunes and nuts to mix and blend well.
  6. Spoon dough into prepared loaf pan and bake for 45 minutes.
  7. Let cool in pan on a wire rack for a few minutes then remove from the pan to finish cooling. Store in an airtight container when completely cooled.
