Apple Spinach Salad

Ingredients:

  • 4 cups bite size lettuce
  • 1/2 cup cashews
  • 1 cup oil
  • 1/3 cup vinegar
  • 1 tsp salt

Directions:

  1. Mix dressing (will keep for a week).
  2. Place lettuce and spinach in a bowl.
  3. Right before serving, cut up apple in small bits.
  4. Add apple and cashews.
  5. Dress the salad right before serving (it will get soggy if you let it sit).
