Apple Sausage Pancakes With Cider Syrup

Ingredients:

Directions:

  1. Stir together pancake mix and cinnamon in mixing bowl.
  2. Beat eggs in separate bowl until lemony then stir in milk and oil.
  3. Add liquid mixture to dry ingredients stirring just until blended.
  4. Fold in shredded apple and cooked sausage.
  5. Heat greased griddle or skillet over medium heat.
  6. For each pancake pour scant 1/4 cup batter onto hot griddle.
  7. Cook pancakes until puffed bubbly and dry around edges.
  8. Turn and cook other side until golden brown then serve with cider syrup.
  9. To make syrup mix together sugar, cornstarch, cinnamon and nutmeg in saucepan.
  10. Pour in apple and lemon juices then cook stirring constantly until thickened.
  11. Boil and stir one minute then remove from heat and stir in butter.
  12. Serve warm over pancakes.
