Apple Pecan Layer Cake

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cup sugar
  • 1 tsp. baking soda
  • 1 tsp/ salt
  • 1 tsp. cinnamon
  • 1 1/2 cup apple sauce
  • 3/4 cup cooking oil
  • 2 eggs
  • frosting
  • 1 lb.box confectioner's sugar
  • 1/2 stick butter, softened
  • 1 (8 oz.) package cream cheese
  • several tbsp. milk (until spreading consistency)

Directions:

  1. Heat oven to 350 degrees.
  2. Grease and flour cake pans.
  3. In large bowl combine flour, sugar, baking soda, baking powder, salt and cinnamon. Add apple sauce and eggs.
  4. Blend on low speed until moistened. Beat 2 minutes at high speed.
  5. Stir in pecans.
  6. Bake for 30 minutes or until toothpick inserted in center comes out clean. DO NOT OVERBAKE.
  7. Cool 10 minutes. Remove from pans. Cool completely.
  8. *** Frosting***
  9. Mix all ingredients together. Frost completely cooled cakes.
