Ingredients:

  • 1 1/3 cups applesauce
  • 1/2 cup vegetable oil
  • 1 tsp vanilla
  • 2 eggs
  • 2 1/4 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/3 tsp cinnamon
  • 1/2 tsp nutmeg

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine carrots, applesauce, oil and vanilla.
  3. Add eggs and sugar and mix together.
  4. In another bowl, mix the rest of the dry ingredients.
  5. Stir dry ingredients into applesauce mixture until blended. Do not over mix.
  6. Divide mixture into 2 loaf pans.
  7. Bake for 55 minutes or until toothpick inserted in center comes out clean.
  8. Remove from the oven and allow to cool before removing from bake ware.
