Ingredients:

  • 2 cups flour
  • 3/4 tsp salt
  • 4 tbsp sugar
  • 2 tbsp butter
  • 1 cup finely chopped apples
  • 1 egg
  • 1/2 cup milk
  • 1/2 tsp cinnamon
  • 12 apple slices

Directions:

  1. Preheat oven to 400F.
  2. Mix flour, salt, baking powder and half the sugar. Cut in the butter with a fork.
  3. Beat the egg with the milk and add to mixture. Add the chopped apples and mix together.
  4. Drop by teaspoonfuls into tins lined with baking cups.
  5. Place one slice of apple on each muffin.
  6. Mix the remaining sugar with the cinnamon. Sprinkle over top of muffins and bake in oven for 20 mins.
