Apple Glazed Baby Carrots

Ingredients:

  • 3 cups baby carrots
  • 1 tbsp lemon juice
  • 1 tbsp butter
  • 2/3 cup chicken broth
  • 1 tsp cinnamon
  • 2 tsp cornstarch
  • 1 tsp water

Directions:

  1. In steamer over 2” of boiling water steam carrots covered for 3 minutes.
  2. Sprinkle with lemon juice then melt butter in medium skillet over medium heat.
  3. Add apple juice concentrate and cook until it melts then add broth and cinnamon.
  4. Bring to a boil then mix together cornstarch with water.
  5. Add to skillet then lower heat and cook until thickened.
  6. Add carrots and toss well to coat.
