Apple Butterscotch Pie

Ingredients:

  • 1 cup packed brown sugar
  • 1/4 cup water
  • 1 tbsp lemon juice
  • 3/4 tsp salt
  • 1 tsp vanilla
  • 3 tbsp butter
  • pastry for 9 pie

Directions:

  1. Preheat oven to 425.
  2. Mix apples, brown sugar, water and lemon juice in 2 quart saucepan.
  3. Heat to boiling then reduce heat and cover then simmer 8 minutes.
  4. Mix flour, granulated sugar and salt then stir into apple mixture.
  5. Cook stirring constantly until mixture thickens and boils.
  6. Boil and stir 1 minute then remove from heat and stir in vanilla and butter then cool.
  7. Turn apple mixture into pastry lined pie plate then cover with top crust that has slits cut in it.
  8. Seal and flute then cover edge with 3 strip of foil to prevent excessive browning.
  9. Bake 45 minutes removing foil during last 15 minutes of baking.
