Apple Bacon Dill Potato Salad

Ingredients:

  • 1/4 cup or so of crumbled bacon
  • 1/2-3/4 cup mayo (i used homemade recipe linked in intro)
  • 1/4 tsp cayenne if using store-bought mayo
  • salt to taste. you could also add pepper but i hate black pepper so i didn'tsp.

Directions:

  1. Cube potatoes and boil until fork-tender
  2. While potatoes are boiling, mix apple, dill, bacon, mayo, cayenne, and salt and pepper in a bowl
  3. Toss potatoes in mayo mixture
  4. Chill for at least 2 hours, but overnight is best for flavor-melding
