Almond Macaroons

Ingredients:

  • 1/2 lb almond paste
  • 1/8 tsp salt
  • 2 tbsp cake flour
  • 1/3 cup confectioners' sugar

Directions:

  1. Cover cookie sheets with parchment paper or aluminum foil, shiny side up.
  2. Soften almond paste with your hands or a food processor.
  3. In large mixing bowl, blend almond paste and sugar.
  4. Separate eggs and add whites to mixture.
  5. Mix in confectioner's sugar, flour and salt.
  6. Stir well.
  7. Force dough through a cookie press or drop by teaspoonfulls onto cookie sheets.
  8. Cover and let stand for 30 minutes.
  9. Preheat oven to 300 deg.F.
  10. Sprinkle cookies with almonds and bake for 25 minutes.
  11. Remove parchment or foil from cookie sheets and let cool.
  12. Peel off macaroons.
