Ingredients:

Directions:

  1. Heat olive oil in a pan. add zucchini, onion, garlic, and salt over low heat and sweat, covered for 20 to 30 minutes.
  2. Add chicken broth and bring to a simmer. cook for an additional 10 minutes.
  3. Blend entire mixture while warm (works easiest with a stick blender- use protection against splatters).
  4. Put into bowls, add a small dollop of sour cream, and enjoy! also good cold in the summer.
