Ingredients:

  • 1 large zucchini cut into 1/2 inch disks
  • 1/2 cup wheat chex crumbs (measure first, then crush)
  • 1/4 cup parmesan
  • dash basil
  • dash oregano
  • dash parsley
  • salt and pepper to taste
  • non-stick cooking spray (i use olive oil in a mister)

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine the cereal, cheese and spices in a large plastic bag.
  3. Dip the zucchini slices in the beaten egg and then roll in the dry mixture.
  4. Place the coated zucchini on a foiled line cookie sheet, sprayed w/ cooking spray.
  5. Spray the tops with a little more coking spray.
  6. Bake for 20 minutes, turning once.
