Ingredients:

  • 2 cups sugar
  • 1 tsp vanilla (optional)
  • 2 eggs
  • 4 cups flour
  • 2 tsp cinnamon
  • 1 tsp salt
  • 2 cups nuts
  • 2 cups raisins

Directions:

  1. Combine zucchini, sugar, baking soda, vanilla and oil.
  2. Beat in eggs and add flour, cinnamon, salt, nuts and raisins.
  3. Drop by teaspoonfuls onto greased cookie sheet or silicone baking sheet.
  4. Bake in a preheated 375°F oven for 15-20 minutes.
