Ingredients:

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 2 cups flour
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 3 tsp cinnamon
  • 2 tsp vanilla

Directions:

  1. Cream together eggs, sugar and oil. Add shredded zucchini. Sift in flour, salt, baking powder, baking soda and cinnamon. Add vanilla. Place in 2 greased loaf pans. Bake at 350 for 55 minutes.
