Ingredients:

  • 1 cup milk
  • 1 cup cream
  • 1/2 cup sugar

Directions:

  1. Place milk and cream in a small saucepan and heat to just below boiling.
  2. In the meantime, whisk together the yolks and sugar.
  3. When the cream’s ready, pour about 3 quarters of it into the yolk mixture and whisk briefly to combine.
  4. Strain it all back into the saucepan through a sieve.
  5. Return to medium heat and bring it to 80°C.
  6. Let the mixture cool for an hour then cover and place in the fridge overnight.
  7. Next day, pour into the ice cream maker and let it do its thing, then transfer to a container and stick it in the freezer to firm up for a couple of hours.
  8. Makes about 3 cups.
  9. **** flavour as you desire, fold in fruit, choc chips, cookie crumbs etc just before placing it in the ice cream maker. Any flavouings that need to 'infuse' (ie vanilla beans) add to the milk/cream mixture while its heating. I made lime ice cream by adding the zest and juice of 2 limes.
