  1. Whisk together the egg, flour, milk and seasoning until absolutely smooth and set aside for at least ten minutes.
  2. Meanwhile, heat the oven to 250°C Pour a little oil into each section of a muffin or cupcake tin (if making individual puds), so the bottom is covered a couple of millimetres deep.
  3. Place the tray in the oven and heat until the oil is super hot.
  4. Pour in enough batter to each hole to third-fill it, then place back in the oven immediately.
  5. Very important: do NOT open the oven door again while they are cooking! Cook for about 20 minutes, until crispy and puffy.
