White Bean and Tomato Soup

Ingredients:

Directions:

  1. Sort beans and rinse.
  2. In a large stock pot place ham bone, beans, onion, celery, garlic, parsley, chicken boulion, and salt and pepper.
  3. Cover with water.
  4. Bring to a boil.
  5. Reduce heat to simmer, and cover.
  6. Cook until beans are tender. About 4 hours.
  7. If desired add diced potatoes and cook until tender.
  8. Add diced tomatoes and tobasco sauce.
  9. Check seasoning, and add salt and pepper if needed.
  10. Simmer covered for at least 30 more minutes to allow flavors to meld.
