White Bean and Potato Stew

Ingredients:

Directions:

  1. Chop sausage into small pieces. I usually slice them then cut into quarters.
  2. Heat oil on medium heat in large pot.
  3. Add sausage and cook until brown, about 5 minutes.
  4. Add onion, cook another 5 minutes.
  5. Add cumin and coriander, make sure to stir well.
  6. Meanwhile drain liquid from bean.
  7. Add stock or broth to pot, let come to a boil.
  8. Add beans and turn down to a simmer.
  9. Peel potato and cut into small cubes.
  10. Add potato to pot and let simmer for 30 minutes.
  11. Add salt and pepper to taste.
  12. Enjoy!
