Ingredients:

Directions:

  1. Poach chicken breasts in chicken broth; reserve broth for another use
  2. Cool and cube chicken
  3. Combine cream cheese (neufchatel) w/yogurt in blender and mix until smooth, adding lowfat milk as needed to achieve pouring consistency
  4. Blanch and shock green beans
  5. Combine chicken, apples, celery and cranberries with dressing
  6. Serve on a bed of lettuce, garnish with green beans
