Very Chocolate Cheesecake

Ingredients:

Directions:

  1. Combine crushed cookies ,1 tablespoon sugar,and melted butter.
  2. Press into a lightly greased 9 springform pan. Set aside(no need to bake it).
  3. In a large mixing bowl,beat cream cheese until smooth.
  4. Add vanilla and 1 cup sugar and continue beating.
  5. Add eggs one at a time,beating well after each addition.
  6. Add sour cream and melted chocolate. Beat until well combined and smooth.
  7. Pour filling into prepared crust.
  8. Bake at 450 degrees for 10 minutes. Then turn oven down to 300 and bake for 1 hour. Do not open oven door.
  9. Turn oven off and let cheesecake cool completely(at least 3 hours) before removing it.
  10. Refrigerate until cold.
  11. Glaze:
  12. In a small saucepan over medium low heat,melt the butter and chocolate.
  13. Add water and vanilla extract. Stir until blended.
  14. Add sugar. Whisk until smooth.
  15. Pour over cheesecake. Refrigerate until set.
  16. Note:
  17. Waterbath is optional. I've always gotten around it by setting a large pan of water on the rack below the cheesecake.
