Vegetarian Eggplant Marinara

Ingredients:

Directions:

  1. Spread small amount of tomato juice in bottom of 9x13 pan so eggplant doesn't stick
  2. Layer eggplant on tomato juice
  3. Layer onions, pepper on eggplant
  4. Spread rest of the tomato sauce with garlic mixed through over top of the eggplant
  5. Season to taste
  6. Cover with foil and bake for 1 hour in 325 degree oven
  7. Let stand for a few minutes before serving
  8. May also apply parmesan cheese sparingly to top of eggplant
