Ingredients:

Directions:

  1. Finely slice onion and red pepper. Heat a non stick pan and spray with pan spray.
  2. Toss in onion and red pepper and cook for 3 mins.
  3. Add mushrooms, tomato and spinach and pepper and smoked paprika and fry another 3 mins or until wilted. Remove from the pan and set aside on a plate.
  4. Lightly beat egg whites, milk, parsley and curry powder in a bowl. Respray the pan with pan spray and pour in the egg mix.
  5. As it cooks lightly fluff the egg mixture with a fork and then leave to cook through.
  6. Place the cheese slice and the vegetables on one half of the omelette and fold it in half and slide the omelette onto a plate.
