Ingredients:

Directions:

  1. Preheat oven to 425F.
  2. In a large bowl,combine all ingredients except granola topping.
  3. Mix well.
  4. Pour into square baking pan. Bake 15 minutes.
  5. Reduce oven temperature to 350 F, and bake 30 minutes longer.
  6. Sprinkle granola over top of pumpkin. Bake for 5 to 10 minutes or until knife inserted 1-inch from edge, comes out clean.
  7. Let cool and serve with fat free Cool Whip.
