Ingredients:

Directions:

  1. Brown meat in dutch oven with a little olive oil and drain fat after browning.
  2. Add pepper,onion and garlic cook for three minutes.
  3. Add all other ingredients except rice and garnish.
  4. Cook low in dutch oven for 45 minutes.
  5. Meanwhile cook rice.
  6. Add rice to pot and cook an additional 30 minutes on low heat.
  7. Serve topped with shredded cheese and sour cream.
