Ingredients:

Directions:

  1. Peel one large potato, cut into chunks and place in a medium size saucepan.
  2. Cover with water and bring to boil.
  3. Cook until tender. Drain.
  4. Mash potatoes and let cool.
  5. In a mixing bowl, mix together 1 cup of mashed potatoes and melted butter; mix well to blend.
  6. Add confectioners' sugar, sweetend coconut, peanut butter, vanilla extract and salt; mix well to incorporate.
  7. Lightly grease your hands with butter and mix the ingredients thoroughly.
  8. Shape mixture into small 1 inch balls or ovals.
  9. Place on a plate or cookie sheet and chill while preparing the chocolate dip.
  10. CHOCOLATE DIP.
  11. In a double boiler, melt semi-sweet chocolate and unsweetened chocolate squares.
  12. Add butter and mix well to blend.
  13. Dip each piece of chocolate to coat well and place on a cookie sheet lined with wax paper.
  14. Place in refrigerator to harden.
  15. Store in refrigerator in an airtight container.
  16. NOTE: You may use either smooth or crunchy peanut butter.
