Directions:

  1. Grate the cucumber into a sieve set over a bowl, or finely dice. Try to avoid using the central seeded core as it is very watery. Squeeze out any excess water by pressing the cucumber down into the sieve and transfer to a bowl. Add the yogurt, garlic, mint, oregano, caster sugar and lime juice. Season to taste and chill until ready to use. Garnish with a sprig of mint and serve with olices and pitta bread.
