  1. Beat the egg with a fork and add feta and press with fork until cheese melts and all the egg is absorbed.
  2. Add pepper and dried mint (about a teaspoonful).
  3. Mix them well.
  4. Cut your phyllo sheets in about 11/2 – 2 inches wide stripes.
  5. Place a teaspoonful of cheese and fold into a triangle.
  6. Continue folding going back and forth until the end of stripe.
  7. Fry in hot oil but careful because they may easily burn.
